Our Doctors

   Kate An Hunter, DVM
Dr. Kate An Hunter, DVM

Dr. Kate An Hunter graduated from the University of Minnesota College of Veterinary Medicine in 1990. She worked previously as a chemist at 3M and was already involved in dog training and showing.

As a practicing veterinarian and owner of Carver Lake Veterinary Center, Dr. Hunter enjoys the opportunity to work with people who are as bonded to their companion animals as she is to hers. When she isn't at the Center, she is usually training her dog Ansel for competition in Agility and Obedience, or riding her horse Ferrous in Dressage, on the trails, or in the Sheriff's Mounted Patrol for Dakota County. Her work in training and competition with animals has lead to her special interest in canine behavior, training, and athletics, and a membership in the American Canine Sports Medicine Association.

Dr. Hunter is on the board of directors of ROMP, Responsible Owners of Mannerly Pets, the non-profit organization which promotes greater access for pets and their owners to parks, businesses, and housing. She is also President-Elect of the Minnesota Veterinary Medical Association. She enjoys sharing her interest in pet care by teaching First Aid for Pets and taking calls on Minnesota Public Radio.

  Kari Ekenstedt, DVM

Dr. Kari Ekenstedt is a 2005 graduate of the University of Minnesota - College of Veterinary Medicine.  Before that she received a B.S. in Animal Science from the University of Wisconsin - River Falls.  She is currently working on a PhD in Canine Genetics and Genomics, also at the University of Minnesota - College of Veterinary Medicine.

Dr. Ekenstedt has wanted to pursue this career since she was very young.  She loves working with animals and enjoys interacting with people who love animals as much as her.  She also really appreciates the science behind practicing medicine.

Kari has a senior cat named Muffy and 3 horses, Dawn, Talley, and Locchet.  Locchet was a research horse that Kari adopted after the research project was finished.  All 3 live on her parents farm where they spend their days grazing and basking in the sun.

When Kari isn't at school or working at the clinic she enjoys traveling.  Last summer she spent 6 weeks backpacking around Europe.  She also spends time swing dancing, reading, bicycling, horseback riding, and rooting for the Green Bay Packers!

  Kelly Griffin, DVM

Dr. Griffin joined Carver Lake's team of doctors after earning her degree in Veterinary Medicine from the University of Minnesota - College of Veterinary Medicine in 2007.  Prior to that she attended Concordia college in Moorhead and graduated with a double major in Biology and Environmental Studies.

While in Vet School Dr. Griffin was active in many of the student organizations and frequently received awards and scholarships for her hard work and dedication to the field.

When Dr. Kelly Griffin is not at Carver Lake she can be found spending time with her husband and their 4 year old daughter.  The Griffin family enjoys backpacking, hiking, and playing a variety of sports together.  They also own a Great Dane named Onyx, and 2 mischievous cats named Mr. Boe Jangles and Gus.

  Joy Schlichting, DVM

Dr. Joy Schlichting graduated from Iowa State University College of Veterinary Medicine in 1986.  She has practiced small animal medicine in Florida, Minnesota and Wisconsin during the past 22 years.  Her experiences also include teaching in a hearing impaired elementary classroom, and she is able to communicate in sign language with clients.

Dr. Schlichting has always loved being around animals and enjoys helping people learn how to care for their pets.  She also values her role in strengthening the human-animal bond by helping pets live happier, healthier lives.
